Ingredients
- 4 flounder fillets
- 2 tbsp of DMJ Sofrito
- 1can (16oz) coconut milk, 1/2 tsp of salt
- 1 tsp of black pepper,
- 1/4 tsp ground turmeric
- 2 tbsp of coconut oil, 1 tbsp of tomato sauce
- 1/2 red pepper cut In stripes,
- cilantro for garnishing (optional)
Directions
- Clean and season the fish with salt and pepper.
- Add the oil and sofrito into a deep fry pan at medium heat and stir.
- Cook for 3 minutes. Add the turmeric, tomato sauce, the coconut milk and stir.
- Let it simmer for 5 minutes.
- Lower the heat and add the fish fillets.
- Pour the sauce over with a spoon to ensure the fish is covered.
- Cover the pan and cook at medium heat for 5 minutes.
- Remove from heat.
- Serve with white rice, moro, mashed potatoes, fried green plantain, or your favorite side dish.
